It is my goal in life to feed my family as healthily as possible. I didn’t grow up with all the healthful food knowledge I have now and I want to instill that into my daughter. I must admit that when my wife is away my go to meal is that infamous powdered mac and cheese. But my wife has over the years has drilled into the importance to nutrition and she absolutely does not want our daughter to have food of that nature. But me being the rebellious spirit that I am I have to find something that will work in my wife’s purview but give me the quick fix mac and cheese I want.
A few years ago I came across Horizon Dairy products. My wife if she could, would only eat organic. I was impressed when I found them that they were really at the forefront of the organic dairy movement. They put out dairy products that are organic and they really do care what they put inside of their milks and cheese, and other products. It starts with the cows and farms they use to make their products. So I grabbed some Horizon Mac and cheese andI knew my wife would feel good knowing Horizon organic reputation. I would still get my mac and cheese I loved.
But I think the real test is the taste. I was skeptical. I had never tried Horizon classic Mac and cheese before. I followed the directions on the box and started to prepare the contents. I however wanted to take it a step further. I know my wife wants us to eat more veggies. I decided that I would add some spicy spinach to the mac and cheese to really make my wife happy, and to bump up the nutrition. I expected the wife to be absolutely thrilled with my decision, but I didn’t expect to like it as much as I did!
I boiled the water for the noodles and then in a skillet I added some frozen spinach with olive oil, ½ tsp of red pepper flakes, garlic and salt to taste. When the spinach was soft I then added the appropriate amount of milk for the cheese mixture to the spinach and added in butter and the cheese. When the noodles were done I combined everything and allowed it to sit for 5-10 minutes to marry together. I have never seen Hannah eat Mac and Cheese so fast. I got cool points from the wife for a good dinner and getting our daughter to eat veggies and not know it!
Try this recipe out and I am sure you will love it!
Ingredients:
2 boxes of Horizon Mac and Cheese
1 package of frozen spinach
½ cup of milk
4 tbs of butter
1tbs of oil
½ tsp of red pepper flakes
garlic and salt to taste
Directions:
Prepare noodles according to box directions. Sauté spinach with oil and red pepper flakes. Add in garlic and salt to taste. When spinach is done add in butter and milk and cheese sauce packets. When thickened add in the cooked noodles. Remove from heat and allow to stand 5 minutes. You can add extra cheese if you would like.

This looks awesome guys! I never had this sort of mac and cheese, but I imagine how better it’d be with typical mac and cheese. Spicy spinach sounds great though!
I love the idea of adding in spinach to mac and cheese. Plus making it spicy sounds all that more appealing. It looks really good though.
Spicy spinach mac and cheese looks great and sounds great. I never really added any special ingredients to mac and cheese, but I suppose it’s time to change that because this recipe will be followed by me, when I make spicy spinach mac and cheese. 😀
Goodness gracious this looks delicious. I hate mac and cheese, but adding in something like spinach I am willing to give it try, and spicing it up also sounds appealing. I’ll try it, maybe it’ll actually get me to eat mac and cheese again.
