Finally we are getting relief from the Winter. As soon as those temps start to rise the short pants and tee shirts come out. It may be 52 degrees outside but it feels like a heat wave and we are quick to shed our winter layer of clothes. I think it’s funny when Winter is setting in and it gets into the 50’s we bundle up and complain about how cold it is. But the opposite is true when Spring has sprung.
When you are in the throws of the snow storms and ice you dream of the greener times and being outside. We like to take walks in the park, and who can resist a good slide??? Getting outside after being cooped up all winter feels like you’re bursting forth into freedom from a long stint in a cell. After a long winter away from the world it’s nice to get outside.
One of the things we like to do is get together with friends and family and have outside picnics. It’s a way to dust off the cob webs of winter and start enjoying the presence and company of others again. Nothing is better than a potluck picnic and getting the try all the dishes people bring.
Each year I look forward to those first tender veggies popping up at the store or in my own garden. But one thing that I hate is to see my produce go bad. I have found a system in Rubbermaid® Freshworks™ that helps keep those first tender spring veggies crispier longer and lasts longer. I want my veggies to retain the nutritional value as long as possible so we can enjoy them!
So as the weather began to warm up I wanted to plan a picnic. I knew I wanted to make an Asian Zoodle salad that would highlight some of my favorite veggies and bring together with an amazing dressing that perfectly highlights each veggies and coats it in amazing flavor. But how would I store this so it would remain crisp and fresh and delish for the picnic? I immediately thought of my Rubbermaid® Freshworks™. It would the perfect vehicle to store and transport my Asian Zoodle salad.
Getting together with friends and family is what life is really all about. I love bringing fresh fruit and veggies to these picnics and I know that when I store them in Rubbermaid® Freshworks™ Containers that I can count on them to keep those first veggies fresh and crisp. Give them a try!
Ingredients:
2-3 spiralized zucchinis
2 sprialized carrots
3 campari tomatoes seeded and diced
2 cups of red cabbage choppped
2 bok choys chopped
5-6 green onions chopped
1 bunch of cilantro chopped
1 tbs of soy sauce
1/4 cup of natural rice vinegar
2 tsp of agave or sugar
1 tsp of ginger paste
3 garlic cloves finely chopped
2 tsp of sesame oil
2 1/2 tbs of olive oil
1 heaping tsp of red pepper flakes
1 tsp of fish sauce
Directions:
Spiralize all zucchini and carrots. Chop and dice all remaining veggies. Place in a bowl and set aside. In a separate bowl mix together ginger, garlic, agave, sesame oil, olive oil, vinegar, soy sauce, red pepper flakes and fish sauce and whisk until combined. Add mixture to veggies and toss together. Allow to marry for two hours or longer. Enjoy!
