This is a delicious and super simple Tangerine Cupcake Recipe. If you read our blog, you know that I am a busy guy. Between two blogs, a full time job at a digital marketing agency, my wife and my three year old princess some weeks it’s a miracle if I post any recipes! Hannah, my little princess begs me daily for treats. It’s a bad habit, but when I get home around 5:30 she screams ‘dada’s home, dada’s home’ and then as I make my weigh up the stairs she greets me at the top and says, ‘dada, can I have a treat?’ I have a hard time saying no, it’s a bad, I usually just grab a few chocolate chips, but I’m the softy, and she knows it.
This day was different. I had a yellow cake mix in the cabinet that needed to be used and had just purchased fresh tangerines from our co-op. Now I know that many foodies would gasp at the thought of using a cake mix, but as a busy dad who can’t spend an hour baking, a cake mix can be a god send. This was one of those cake mix days. This recipe is simple and easy, it involves a yellow cake mix and tangerines. That’s it! Yea I told you it was easy!
I squeezed out the juice from the tangerines, Hannah of course demanding to help, and added enjoy to find the right consistency, which was about a 1/2 cup of fresh tangerine juice. We mixed them up and for a little more flavor we zested some of the tangerine skins! Hannah asked if we could put some of the tangerines inside the cupcakes (entirely her idea) and so a few of them have tangerines inside. I wasn’t sure how they would taste and if you’ve never done it, I wouldn’t stuff them all. I found them to be overwhelming tart, almost bitter, but Hannah loved them. She told me they were special! Overall this was a yummy recipe. I love tangy recipes, and the yellow cake mix was the perfect medium for this! We enjoyed every one! Topped with some leftover homemade icing and some tangerine zest this was a fun toddler approved recipe!
